Delicious COCONUT DAHL 😍

 

This dish is a firm favourite on my Digestive Wellness Course 🍅🥥 🌱

✅ Bring the following to a boil, then reduce heat to low, cover pan and cook for 15 mins

275g veg stock

1 tsp turmeric

150g red lentils, rinsed

✅ In a fresh pan melt the oil and cook the following for 4 mins

1 Tbsp coconut oil

1 onion diced

1.5 tsps cumin seeds

✅ Add to the onion mixture. Cook for a few mins - gently

1/2 can coconut milk

Handful cherry toms

Cooked lentils

Fresh or dried coriander 

✅ Add spinach to the pan and wilt

Serve x
